SPAGHETTI AND GIANT MEATBALLS

Preparation Time: 20 minutes
Cook Time: 25 minutes
1 box Dreamfields Spaghetti
1/2 pound ground beef (85% lean)
4 ounces ricotta cheese
3 ounces finely grated Parmesan cheese
Zest of 1/2 lemon
3 tablespoons unsalted butter
2 teaspoons minced garlic
36 ounces good quality no salt added tomato sauce
Pinch of sugar
Chopped fresh basil (optional)
1. Place ground beef, cheeses, lemon zest, egg, and salt, if desired in medium bowl. Mix ingredients with hands, mixing lightly but completely. Divide mixture; shape into 6 large meatballs.
2. Heat butter in large deep skillet or Dutch oven over medium heat until melted. Add garlic; cook 1 minute, or until fragrant, stirring frequently. Add tomato sauce, sugar and salt, if desired to skillet. Add meatballs; cook 20 to 25 minutes or until meatballs are cooked through.*
3. Meanwhile, cook pasta according to package directions.
4. Top pasta with sauce and meatballs. Sprinkle with basil, if desired.
Makes 6 servings.
*To ensure meatballs are cooked through, test with an instant-read thermometer; internal temperature should be 160°F.
